Lunar New Year traditional recipe: Pork Dumplings

BAKERSFIELD, Calif. (KGET) — While some people ring in the new year at midnight each Jan. 21, some Asian cultures celebrate weeks later.

Lunar New Year festivities last just over two weeks, kicking off last week, for the year of the snake.

In honor of Lunar New Year, Chef Richard Yoshimura, with Woolworths Luncheonette, is showing you how to make traditional pork dumplings.

Dumplings are a symbol of wealth and prosperity during Lunar New Year, due to the dish resembling coins.

Chef Richard recommends picking up dumpling ingredients at the Asia Market on White Lane, but you can also pick them up at Vons or Albertsons.

Ingredients:

  • 1 lb ground pork
  • 2 cups finely chopped Napa cabbage
  • 3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 1/4 tsp salt (adjust to taste)
  • 1 pkg dumpling wrappers

Dipping sauce:

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp chili oil (optional)
  • 1 tsp sesame oil
  • 1 clove garlic, minced (optional)

Prepare the filling:

  • In a large bowl, combine ground pork, Napa cabbage, green onions, garlic, and ginger.
  • Add soy sauce, oyster sauce, sesame oil, sugar, white pepper, and salt.
  • Mix well until the filling is evenly combined. Let it rest for 15-20 minutes to allow the flavors to meld.

Assemble the dumplings:

  • Place a small spoonful of filling (about 1 tbsp) in the center of a wrapper.
  • Dip your finger in water and moisten the edges of the wrapper.
  • Fold the wrapper in half, pleating the edges to seal the dumpling. Ensure there is no air pockets inside.

Cook the dumplings:

  • Steaming: Place dumplings in a steamer lined with parchment paper or cabbage leaves. Steam for 8-10 minutes until cooked through.
  • Pan-frying (potstickers): Heat oil in a non-stick skillet over medium heat. Place dumplings in the pan and cook until the bottoms are golden brown. Add 1/4 cup water, cover, and steam for 6-8minutes until the filling is cooked.

Arrange the dumplings on a plate and serve hot with the dipping sauce.
